if you mean, make it black and white, with no colors, then yes. Use Image -> Adjustments -> Desaturate

Probably because it's connected to textures.

Personally, I would probably go to a photoshop forum to learn the basics of using the product. They probably have some great beginner tutorials at the Adobe website.
But that's just me.;)

I have a book about photoshop, but there was nothing about making pictures gray. :p

You can also use the "Black and White" command.
