time ago my mom the pineapple cheesecake it where
you bake shortbread crust and filling had pineapples and cream cheese but that i could remeber and been looking all the net look that
pineapple cheese recipe and can't find
annaiac since you like bake maybe you some good
pineapple cheesecake recipe

This is the best I could come up with. I don't see why you couldn't drain and dry (blot) crushed pineapple and add it to the mix. I'd still use the topping as well.

Pineapple Cheesecake

16 ounces cream cheese, softened

3 eggs

14 fluid ounces CARNATION Sweetened Condensed Milk

1 cup sour cream

3 tablespoons sugar

1/2 cup pineapple chunks, crushed

Preheat oven to 375 degrees.

In a large bowl beat softened cream cheese until smooth. Blend in eggs and sweetened condensed milk. Pour into a prepared crust and bake for 25 minutes.

Meanwhile prepare topping: Combine sour cream, sugar, and drained, crushed pineapple chunks. Mix well.

When pie has cooled, carefully spread on pineapple topping.

Serving Size: 9

For shortbread crust
1/2 cup unsalted butter (room temperature)
1/4 cup granulated sugar
1/2 cup flour
1/2 cup finely ground Trefoil (shortbread) cookies

Make crust:
Using an electric mixer, cream the butter and sugar together on medium high speed for 3-4 minutes. Add flour and ground Trefoils to the mixture and blend for 3-4 seconds until fully incorporated. Press the mixture evenly into the bottom of a 9-inch springform pan. Bake the crust at 350 F for 20-25 minutes, or until golden brown. Allow the crust to cool completely.

My dad would make something like this for a Thanksgiving dessert (yes - along with Pumpkin Pie). I might try to make it now. Thanks Annacia. :D

I think what Moonstalk........I mean Moonwalker was trying to say is that he would have really enjoyed a piece of Pineapple Cheesecake, but if he ate it, he would never fit his flabby bottom into those horizontal striped, bellbottomed, polyester stretch pants with the lace-up crotch he wears all the time again!!!! I just think he was too shy to say it.
