I found lots of music, but unfortunately, I'm not familiar enough with it to give the tracks correct names.
The Rat Theme and Croft Manor theme are easy, but I have a hard time accurately labeling the rest.
Maybe I should post them as Music 1, Music 2, Music 3, etc, and others can hopefully correctly identify the pieces.

Many sounds seem to occur multiple times. There is a LOT of Egypt and Cistern ambient tracks. They are the largest files there (over 150 MB wav files, or something like that.) I was actually surprised that the music wasn't the biggest.

There is also tons of tracks of Toby Gard and his commentary that I didn't label.

Another note, some the music extracted as a 6 channel wav file, which I first had to convert to a two channel wav file before I was able to analyze or edit them in my particalur wav editor program (Sony Soundforge). They play fine in Windows Media Player though even though they are 6 channels.
They are very high quality as well. A real pleasiure to listen to!

Too bad I don't have anniversary to extract sounds, I'm finally glad a Legend/Anniversary sound extractor, I wanted weapon sounds From TRA.

I too used Audacity. Most probably, Sound Recorder was having the same problem as Sound Forge: it couldn't open a multi channel wav like I posted just above your post.

I do find it utterly ridiculous that a free program like audacity has more power in certain regards than the big buck software (Sound Forge). How upsetting!

Read the readme,

Install microsoft .NET framework and it will fix the problem.

Why don't you just download that cutscene and use the sound of it?

No, actually the cutscenes are recorded with voices, music and FX in once. So you can't separate them ... unless anybody found a way to do it (then I will love that person forever).
